Cosori Juni uses AI and barista-inspired pouring for pour-over coffee

The Cosori Juni is a drip coffee maker designed to mechanically reproduce the movements of a trained barista. It uses a rotating basket and an extendable nozzle to pour water over ground coffee at the movement and speed associated with a goose-neck kettle.

According to Cosori, the system creates a 360-degree spiral flow that evenly saturates the grounds while reducing channels that can cause uneven extraction. Its process is consistent and repeatable, allowing users to reuse settings for their preferred beans.

Pierce Barnard, Head of Product Innovation at Cosori, says the company spent 18 months studying and mapping how skilled baristas move across a coffee bed. The Juni can automate the process or let users adjust brewing factors such as agitation, temperature, flow rate, and pause time.

Its AI can scan a bag of coffee beans, generate a brewing profile based on the bean type and chosen cup size, and warn when settings may produce an under- or over-extracted drink. Manual mode and presets are also available. A timer supports different times for each day of the week, and users can set a reminder to prepare the machine the night before.

The Cosori Juni costs $299.99 (about £220 / AU$430). The similarly technical Fellow Aiden Precision Coffee Maker has a list price of $365 / £365 (about AU$580). It is not yet clear whether the Juni will support beans from every brand.
